The Recipe:
Ingredients:
1 cup vegan butter (we love using coconut oil or almond butter!)
3/4 cup sugar
1/2 cup brown sugar
2 large eggs, replaced by 2 flax eggs*
2 teaspoons vanilla extract
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup semisweet vegan chocolate chips
Instructions:
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a large mixing bowl, cream together the vegan butter and sugars until light and fluffy.
Add the flax eggs** and vanilla extract, mixing until smooth.
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add to the wet ingredients, mixing until a dough forms.
Fold in those delicious chocolate chips!
Scoop tablespoon-sized balls of dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie.
Bake for 10-12 minutes or until lightly golden brown.
Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
